Asparagus and Spinach Frittata

This delicious frittata is perfect for breakfast, brunch or dinner, and it's full
of flavorful, fresh ingredients that are sure to be a crowd pleaser.
Ingredients
- 1 cup fresh asparagus
- 8 large eggs
- 1/2 cup whole milk
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 T extra virgin olive oil
- 2 minced garlic cloves
- 1 oz finely sliced spinach
- 5 cups spinach leaves
- 1/2 cup shredded cheese
- 1 cup sliced button mushrooms
Instructions
- • Preheat broiler to 350 degress Fahrenheit
- • In a small pot, bring water to boil
- • Cook asparagus in boiling water for 2 minutes or until tender
- • Whisk eggs, milk, salt and pepper in a large bowl until blended
- • Heat 1 tablespoon olive oil in an oven-proof 12 inch skillet over medium heat
- • Add minced garlic and saute for one minute
- • Stir in fresh spinach leaves and cook until slightly wilted
- • Reduce heat to low and stir in asparagus
- • Pour egg mixture in skillet and stir to distribute all ingredients
- • Cook eggs on stove top for 8 to 10 minutes (Eggs should be runny, but set on the sides)
- • Remove frittata from heat and cover with shredded cheese
- • Place skillet in oven for 3 minutes or until center is firm and cheese is melted
- • Remove from oven and let sit for 10 to 15 minutes before serving
- • Cut into 6 pieces and garnish each with finely sliced spinach
