Bourbon-Infused Watermelon Salad

Have you ever tasted bourbon-infused watermelon, let alone with garden fresh greens and corn? These flavors will reinvent your idea of a summertime salad.
Ingredients
- SALAD
- 2 cups Garden Fresh Salad Greens
- 6 ears corn, roasted and removed from cob
- 1/2 cup crumbled feta cheese
- WATERMELON
- 2 pounds watermelon diced
- 2 fl oz Knobb Creek Bourbon
- 1 T extra virgin olive oil
- 10 whole basil leaves
- salt & Pepper to taste
- TOMATOES
- 2 pounds local heirloom tomates, wedged
- 1 tsp extra virgin olive oil
- 1 T fresh herbs, chopped fine (parsley, thyme and chives)
- salt & pepper to taste
- GARDEN BASIL GREEN GODDESS
- 1/2 cup mayonnaise
- 1/4 cup yogurt
- 1/4 cup parsley
- 2 T Basil
- 2 T Chives
- 1 tsp Champagne Vinegar
- 1 lemon, juiced
- salt & pepper to taste
Instructions
- COMPRESSED WATERMELON:
- • Combine all ingredients and allow to marinate for 30 minutes. Strain excess liquid and vacuum pack.
- • Place in refrigerator and allow resting for at least 4 hours and no more than 12 hours as the melon will begin to loose its texture.
- GARDEN BASIL GREEN GODDESS:
- • Combine all ingredients in a food processor or blender and process and until smooth. Season with salt and pepper.
- ASSEMBLE THE SALAD:
- • In a mixing bowl, combine tomatoes, compressed watermelon, corn, and feta cheese. Season with EVOO, salt, pepper, and fresh chopped basil.
- • Spoon dressing on plate and place mixture on dressing then garnish with seasoned greens.
