Ingredients
  1. SALAD
  2. 2 cups Garden Fresh
Salad Greens
  3. 6 ears corn, roasted and removed from cob
  4. 1/2 cup crumbled feta cheese
  5. WATERMELON
  6. 2 pounds watermelon diced
  7. 2 fl oz Knobb Creek Bourbon
  8. 1 T extra virgin olive oil
  9. 10 whole basil leaves
  10. salt & Pepper to taste
  11. TOMATOES
  12. 2 pounds local heirloom tomates, wedged
  13. 1 tsp extra virgin olive oil
  14. 1 T fresh herbs, chopped fine (parsley, thyme and chives)
  15. salt & pepper to taste
  16. GARDEN BASIL 
GREEN GODDESS
  17. 1/2 cup mayonnaise
  18. 1/4 cup yogurt
  19. 1/4 cup parsley
  20. 2 T Basil
  21. 2 T Chives
  22. 1 tsp Champagne Vinegar
  23. 1 lemon, juiced
  24. salt & pepper to taste
Instructions
  1. COMPRESSED WATERMELON:
  2. • Combine all ingredients and allow to marinate
for 30 minutes. Strain excess liquid and
 vacuum pack.
  3. • Place in refrigerator and allow resting for at least
4 hours and no more than 12 hours as the melon will begin to loose its texture.
  4. GARDEN BASIL GREEN GODDESS:
  5. • Combine all ingredients in a food processor or blender and process and until smooth. Season with salt and pepper.
  6. ASSEMBLE THE SALAD:
  7. • In a mixing bowl, combine tomatoes, compressed watermelon, corn, and feta cheese. Season with EVOO, salt, pepper, and fresh chopped basil.
  8. • Spoon dressing on plate and place mixture on dressing then garnish with seasoned greens.
