Broccoli Lentil Pasta

Broccoli Lentil Pasta is delicious pasta salad that features red lentil pasta, which is high in protein and low in carbohydrates. The nutritional yeast has a cheesy, nutty taste full of protein!

Ingredients

  1. 1 package Red Lentil Sedanini
  2. 1 bag of fresh or frozen broccoli florets
  3. 1 cup peas (optional)
  4. ¼ cup extra virgin olive oil
  5. ¼ to ½ cup of nutritional yeast (substitute for grated Romano cheese)
  6. 4 cubes frozen garlic
  7. salt and pepper to taste

Instructions

  1. Lightly boil or steam broccoli until it is firm, not soft.
  2. While broccoli is cooking, boil water for pasta.
  3. Heat skillet, sauté garlic in half of olive oil.
  4. Add cooked broccoli.
  5. Cook pasta al dente.
  6. When pasta is done, add to skillet with broccoli.
  7. Stir to combine, add remaining olive oil and nutritional yeast, and toss.
  8. Season to taste.
