Chicken Thighs with Onions and Brussels Sprouts

Ingredients
- 2 pounds chicken thighs (around 8)
- 1 red onion, sliced
- 1 pound Brussels sprouts, quartered
- 3 tablespoon grapeseed oil, divided
- 1 teaspoon salt, divided
- 1 teaspoon ground black pepper, divided
- 9 cloves garlic, minced
- 2 sprigs fresh rosemary
Instructions
- Heat oven to 425F.
- Place the Brussels sprouts, onion slices, 2 tablespoon of the grapeseed oil, 1/2 teaspoon of salt and 1/2 teaspoon pepper on a large baking sheet. Cook until onions are golden brown and tender (about 20-25 minutes).
- Meanwhile, heat the remaining oil in a large skillet over medium heat. Season the chicken with the remaining salt and pepper and cook, skin-side down, until the skin is crisp (about 8 minutes).
- Turn the chicken, add the minced garlic and rosemary sprigs to the pan, and cook until the garlic is golden brown and the chicken is cooked through (about 6 minutes more).
- Serve with the vegetables.
