Ingredients
  1. 2 cans (15 oz each) white beans or chickpeas, drained and rinsed*
  2. 1 cup quick oats (can use certified gluten-free if desired)
  3. 1/4 cup unsweetened applesauce
  4. 3 tbsp oil of your choice
  5. 2 tsp pure vanilla extract
  6. 1/2 tsp baking soda
  7. 2 tsp baking powder
  8. 1/2 tsp salt
  9. 11/2 cups brown sugar
  10. 1 cup chocolate chips
  11. 1 tablespoon golden flaxmeal (optional, and not in the original recipe)
Instructions
  1. Preheat oven to 350 degrees and oil a 10 inch springform pan.
  2. Combine all ingredients except chocolate chips in a food processor and process very well until you achieve a batter consistency (this took about a 60-90 seconds in my Kitchenaid food processor).
  3. Fold in chocolate chips.
  4. Spread batter in the pan and bake for 35-50 minutes.
  5. Cool 10 minutes and remove from pan.
Notes
  1. I use Eden Organics brand chickpeas (garbanzo beans) because their cans are BPA-free
