Cucumber & Avocado Sandwiches

Ingredients
- 1 (8-oz) package Neufchâtel
- 8 slices bread, crusts removed
- 1 cup fresh arugula
- 1 English cucumber, peeled and thinly sliced
- 2 avocados, peeled and thinly sliced
- 1 tsp. chopped fresh dill
- Salt & pepper to taste
Instructions
- In a small bowl, combine Neufchâtel, salt and pepper. Spread about 1 tablespoon of the mixture onto a slice of bread.
- Layer arugula, cucumber and avocado, then sprinkle with dill.
- Top with a second slice of bread.
- Cut sandwich into four rectangles.
- Repeat with remaining ingredients.
- Serve immediately.
Notes
- Pair with silver needle white tea.

Egg Salad Sandwiches

Ingredients
- 6 eggs, hard-boiled
- ¼ cup plain, non-fat Greek yogurt
- 1 tsp. Dijon mustard (or powdered mustard)
- 1 tsp. chopped fresh dill
- Salt & pepper to taste
- Fresh baby spinach
Instructions
- Peel and chop the eggs, discarding two of the yolks if you prefer a slightly less “eggy” taste.
- Place in a mixing bowl, then fold in the yogurt, mustard, dill, salt and pepper.
- For sandwiches, spread on toasted whole wheat bread, then top with spinach leaves.

- Pair with assam black tea.
