Honey Barbecue Grilled-Chicken

There is nothing like the sweet and savory twist of honey barbecue chicken straight from the grill.
Ingredients
- 4-6 Chicken Quarters (or any mix of chicken)
Marinade
- 4 T Olive Oil
- 5 t Kosher Salt
- 2 t Chili Powder
- 2 t Smoked Paprika
- 2 t Chipotle Powder
- 2 t Brown Sugar
- 2 t Fresh Thyme
- 2 t Black Pepper
- 2 Cloves, minced
Honey Glaze
- 1/2 Cup honey
- 2 T soy sauce
- 2 T ketchup
- 4 t dijon mustard
- 4 t worcestershire sauce
- 2 t apple cider vinegar
Instructions
- • Marinade: Mix olive oil, kosher salt, chili powder, smoked paprika, chipotle powder, brown sugar, fresh thyme, black pepper and 2 cloves minced garlic.
- • Rub this mixture over four to six chicken quarters, cover and allow to marinate overnight.
- • Honey Glaze: Combine honey, soy sauce, ketchup, dijon mustard, Worcestershire sauce and cider vinegar. Separate into two containers, one for brushing over the chicken as it cooks and one for using as a dipping sauce.
- • Place chicken pieces over high heat on the grill (450°F) with skin-side down and cook with the grill lid closed, checking periodically and turning over when chicken is browned and released easily from the grates. (5-10 minutes)
- • Flip the chicken pieces, and brush with the honey glaze, allowing to cook for another 15-20 minutes, brushing more glaze on every five minutes.
- • The chicken is done when a meat thermometer inserted into the thickest part of the chicken reads 165°F.
- • Allow the chicken to rest for five minutes and then serve with the reserved container of honey glaze.
