Not So Sloppy Burgers

Ingredients
- One 15 ounce can lentils, drained and rinsed
- 3 tablespoons tomato paste
- 1/2 cup tomato sauce
- 1 small sweet onion, chopped
- 1/2 cup fresh corn – (grilled or roasted has best flavor)
- 2 stalks celery, trimmed and chopped finely
- 1/2 cup chopped mushrooms (optional)
- 1 cup finely chopped spinach
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon ground mustard seed
- 1 clove garlic, chopped
- 1 teaspoon chipotle powder or chili powder
- 2 tablespoons honey, brown sugar or pure Virginia Maple Syrup
- 2 tablespoons cider or white vinegar
- 1 tablespoon extra virgin olive oil
- salt and black pepper to taste (about 1/4 teaspoon salt)
- 6 sprouted grain or favorite burger buns, sliced in half
- For pan: 1 teaspoon extra virgin olive oil
- Topping ideas – romaine lettuce, avocado, sliced tomato, shredded carrots, pickles
Instructions
- Combine all ingredients in a stockpot and cook on low heat until vegetables are tender, 10 to 15 minutes.
- Add 1/2 cup portions of burger mix on each bun. This can be made into taco filling by adding 1 teaspoon cilantro and omitting mustard seed.
- Serve with sliced apples, greek yogurt dip & cinnamon sprinkles and a small green salad with carrot ribbons & cherry tomatoes
