Never mind Taco Tuesday, every day can be Taco Day with these fresh and tasty recipes! Fire up the grill to fix a variety of taco fillings that are sure to satisfy every palate. Tacos have never tasted better. Provecho!
To Make Taco Shells: Brush flour tortillas lightly with olive oil and place in warmed skillet on the stove. Flip after a few minutes.
The Boho
Who says tacos can’t be vegetarian? Cut an eggplant into ¾-inch thick pieces, brush with olive oil and season with salt, pepper and a little cayenne if you like spice. Grill 4-5 minutes per side or until tender. Slice or cube and place in taco shells. Top with homemade slaw.
The Stripper
Season a New York Strip steak with salt and pepper, then grill to medium-rare. Slice into strips and lay in taco shells. Top with sliced peppers and crumbled fresco cheese.
The Rocker
Season rockfish fillets with salt, pepper and a little olive oil. Grill until cooked through, about 3 minutes a side. Place in taco shells and top with pico de gallo and jalapeños.
- 1 cup diced tomatoes
- ¼ cup diced red onion
- ¼ cup diced green onion
- ½ cup chopped fresh cilantro
- (optional) 1 small jalapeño, diced (veins and seeds removed)
- 2 teaspoons lime juice
- Salt & pepper to taste
- Mix all ingredients in a bowl, then serve. Pico de gallo is best eaten fresh.
- 1 can black beans
- 1 small can sweet corn
- ½ cup diced red onion
- 1 cup diced grape tomatoes
- ¼ cup chopped fresh cilantro
- ¼ cup balsamic vinegar
- ¼ cup olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon chili powder
- ¼ teaspoon cumin
- Salt & pepper to taste
- Drain and rinse black beans and corn. Combine all ingredients. Chill and serve.
- 1 cup sliced and chopped red cabbage
- 1 cup sliced and chopped Napa cabbage
- 1 cup chopped kale
- ½ cup red wine vinegar
- 2 tablespoons olive oil
- Juice from half a lime
- 1/8 teaspoon cayenne pepper
- Salt & pepper
- Toss the cabbage and kale together. In a separate bowl, mix together the vinegar, oil, lime juice, cayenne, salt and pepper. Pour dressing over veggies and mix. Tip: Buy bagged cabbage mix and skip the chopping!
