Vegan Banana Chocolate Chip Cookies

Ingredients
- 1 cup gluten-free rolled oats
- 1 cup bananas, ripe and mashed (about 2 bananas)
- 1/2 cup vegan dark chocolate chips
- 1/4 teaspoon salt
- 2 tablespoon cocoa powder
- 3 tablespoon unsweetened shredded coconut (optional)
Instructions
- Preheat oven to 375F.
- Line two cookie sheets with parchment paper and set aside.
- Add all of the ingredients in a large bowl. Mix well.
- Drop spoonfuls of cookie batter onto the lined cookie sheets a few inches apart and flatten them slightly with the base of a spoon. Bake for 10 minutes.
- Let them cool on the baking sheet for five minutes before serving.
- Makes 10-12 cookies
