Walnut & Sage “Meat Balls”

Ingredients
- 1/3 cups raw walnuts (preferably soaked and dried)
- 1 tablespoon nutritional yeast
- 1 1/2 tablespoons extra virgin olive oil
- 2 teaspoons freshly squeezed lemon juice
- 2 teaspoons soy sauce
- 2 tablespoons of fresh sage
- 1 teaspoon garlic, minced
- 1 teaspoon thinly sliced green onion
- 1 1/2 tablespoons fresh parsley
Instructions
- Place all ingredients except green onion and parsley into the food processor with an S blade. Mix until smooth.
- Add in green onion & parsley and pulse mixture until you can see pieces of parsley throughout the mixture.
- Use the batter to make 12 meatballs. Place the meatballs onto a dehydrator sheet or a non-stick oven sheet.
- Dehydrate for 6 hours at 150 degrees or bake at 250 degrees until desired texture is reached.
