Wild Mushroom Spread

Ingredients
- 2 teaspoon grapeseed oil
- 1/2 cup shallots, finely chopped
- 3 1/2 cups wild or cultivated mushrooms (about 12 ounce), finely chopped
- 1/2 cup (4 ounce) 1/3 less-fat cream cheese, softened
- 2 tablespoon dry sherry
- 2 tablespoon fresh flat-leaf parsley, minced
- 1/2 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
Instructions
- Heat oil in a large skillet over medium heat. Add shallots
- and cook until tender (about 3 minutes), stirring occasionally.
- Add mushrooms and cook until liquid evaporates (about
- 7 minutes), stirring occasionally.
- Place mixture in a medium bowl. Place half of the mixture in a food processor with cream cheese and sherry. Process until smooth.
- Add puréed mixture to remaining mushroom mixture;
- then add salt, pepper and parsley. Stir until combined.
